It is one of our favorite times of year in our household…NCAA® March Madness! While we love to traditionally create a spread with all of our favorite snacks, I decided to shake things up a little bit and try something new. We typically have the salty and cheesy hors d’oeuvre laid out, but with my sweet tooth I wanted to add a fun sweet treat to the mix. Ladies and gentleman, I shall present to you Chocolate Cherry Coke cupcakes…basketball edition!
After a trip to our local Walmart, I found three flavors of Coca-Cola NCAA® Final Four Packs. Granted I only needed the Cherry Coke flavor, but I decided to buy all of them since Walmart has a super amazing deal of four packs (16 cans) for $5 or two packs for $3. An awesome deal!
The final two steps include using orange and black frosting to create basketballs on top of your white frosting. Serve up and bam, you will have instant fans!
Here is the recipe in case you are interested in trying these.
Cherry Coke Cupcakes
Makes 24 cupcakes
1 (16.5 ounce) box of chocolate cake mix
4 large eggs
1/3 cup softened butter
1 cup Cherry Coke
For the Frosting:
2 cups heavy whipping cream
6 tbsp sugar
2 tbsp vanilla extract
Preheat the oven to 350 degrees F.
Combine one box of chocolate cake mix, butter and Cherry Coke in a large mixing bowl.
Line your cupcake pan with 24 cupcake liners. Fill each cupcake 2/3 full with cake batter.
Bake the cupcakes in the oven for 18-20 minutes until a tooth pick comes out clean. Allow the cupcakes to cool completely.
To make the whipped cream frosting, chill a metal mixing bowl in the freezer for 15 minutes. Once chilled, whip the heavy whipping cream, sugar and vanilla extract until the cream thickens.
